This week I am featuring Lisa @ The Nourishing Homemaker. She is sharing a DELICIOUS recipe for Coconut Waffles that are gluten free. I know that many people are doing gluten free diets now and this recipe looks WONDERFUL!
Here is what Lisa has to share today:
I was amazed this morning when I got up and made these waffles for my kids! When I found the recipe I was a little skeptical. 1/4 cup of flour for 8 waffles???? I don't think so! They turned out wonderful! The waffles were a beautiful golden brown and I bet the leftovers will crisp up nicely in the toaster oven.
Gluten free flour, especially grain free flour like almond and coconut, can be expensive. I love that so little coconut flour is used. Eggs are a frugal source of protein and with almost 1 eggs per waffle, this breakfast is a healthy, thrifty way to start the day.
I have done a lot of searching to find coconut flour at a better price than Whole Foods ($9 per lb.). Amazon.com does have the best price that I have seen for Coconut Flour. It's $4.18 per pound and if you order two packs, you'll have enough for Free Shipping. I don't often directly promote something like this, but I thought I'd pass it along to those who use coconut flour a lot.
Note: to make them dairy free use coconut oil rather than butter as suggested.
RECIPE:
Coconut Flour Waffle Recipe
Makes approximately 8 waffles, I usually double this recipe so that I have leftovers to use as sandwich bread the next day.Ingredients:
- 4 tablespoons melted coconut oil, butter, or ghee
- 1/4 cup coconut flour
- 6 eggs
- 2-4 tablespoons pureed apple, pumpkin, banana, pear, or other mix in (optional- the waffles pictured above are pumpkin)
- 2 tablespoons honey
- 1/4 tsp salt
Preheat waffle iron (I always use high), grease generously with coconut oil or ghee. Mix all ingredients until smooth. Pour batter onto waffle iron, and using a butter knife or the back of a spoon, spread the batter to evenly distribute over the iron. Cook 3-4 minutes, or until golden brown. Repeat with the remaining batter, keeping cooked waffles covered with foil in a 200 degree oven to keep warm if you wish.
